Ingredients
1 package (20 ounces) 15 bean soup mix
8 cups water
1 ham hock or ham bone
1 onion, diced
2 carrots, peeled and diced
2 stalks celery, diced
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes
2 teaspoons dried thyme
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Rinse the 15 bean soup mix under cold water and drain well.
In a large pot or Dutch oven, combine the rinsed beans, water, ham hock or ham bone, diced onion, diced carrots, diced celery, minced garlic, diced tomatoes (including the juice), dried thyme, and dried oregano.
Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 1 1/2 to 2 hours, or until the beans are tender and the soup is thickened, stirring occasionally.
Once the soup is cooked through, remove the ham hock or ham bone from the pot. Remove any meat from the bone, chop it into bite-sized pieces, and return it to the soup.
Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
