Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, melted and cooled
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup diced apple (peeled and cored)
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups lightly.
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
In a separate bowl, mix together the melted unsalted butter, granulated sugar, and brown sugar until well combined.
Add the eggs to the butter and sugar mixture, one at a time, beating well after each addition.
Stir in the unsweetened applesauce and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Gently fold in the diced apple until evenly distributed throughout the batter.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
