1 lb boneless, skinless chicken breasts, cooked and shredded

1 cup refried beans

1 cup shredded cheddar cheese

1/2 cup salsa

1/4 cup chopped fresh cilantro

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

6 large flour tortillas

Cooking spray


Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, combine shredded chicken, refried beans, shredded cheddar cheese, salsa, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.

Place a tortilla on a flat surface. Spoon chicken mixture onto the center of the tortilla.

Fold in the sides of the tortilla, then roll it up tightly to form a burrito shape. Place seam-side down on the prepared baking sheet.

Repeat with remaining tortillas and chicken mixture.

Lightly spray the tops of the chimichangas with cooking spray.

Bake in the preheated oven for 20-25 minutes or until chimichangas are golden brown and crispy.
