1 pound beef stew meat, cut into bite-sized pieces

1 onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

2 cloves garlic, minced

6 cups beef broth

1 cup pearl barley

1 bay leaf

Salt and pepper, to taste

Fresh parsley, for garnish (optional)


Instructions

In a large pot or Dutch oven, heat olive oil over medium heat. Add the beef stew meat and cook until browned on all sides, about 5-6 minutes.

Add diced onion, sliced carrots, sliced celery, and minced garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

Pour in beef broth and add pearl barley and bay leaf to the pot. Season with salt and pepper to taste.

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45-60 minutes, or until the beef is tender and the barley is cooked through.

Once the soup is ready, discard the bay leaf and adjust seasoning if necessary.
