  • 1/4 cup diced pickles
  • Ketchup and mustard, to taste
  • Cooking spray or butter, for griddle

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with salt and pepper. Drain excess fat and set aside.
  2. Preheat your griddle or large skillet over medium-high heat and grease lightly with cooking spray or butter.
  3. Place one tortilla on the hot surface. Sprinkle with 1/2 cup cheddar cheese.
  4. Add a quarter of the cooked ground beef evenly over the cheese, followed by diced onions, tomatoes, and pickles.
  5. Drizzle with ketchup and mustard to your liking, then top with another 1/2 cup cheese and a second tortilla.
  6. Cook for 3–4 minutes per side, or until the tortilla is golden and crispy and the cheese is melted.
  7. Remove from griddle, let cool slightly, and slice into wedges.
  8. Repeat with remaining tortillas and fillings.
