- Salt and pepper, to taste
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup diced pickles
- Ketchup and mustard, to taste
- Cooking spray or butter, for griddle
Instructions
- In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with salt and pepper. Drain excess fat and set aside.
- Preheat your griddle or large skillet over medium-high heat and grease lightly with cooking spray or butter.
- Place one tortilla on the hot surface. Sprinkle with 1/2 cup cheddar cheese.
- Add a quarter of the cooked ground beef evenly over the cheese, followed by diced onions, tomatoes, and pickles.
- Drizzle with ketchup and mustard to your liking, then top with another 1/2 cup cheese and a second tortilla.
- Cook for 3–4 minutes per side, or until the tortilla is golden and crispy and the cheese is melted.
- Remove from griddle, let cool slightly, and slice into wedges.
- Repeat with remaining tortillas and fillings.
