Ingredients
2 lbs baby potatoes, halved
1/2 cup unsalted butter
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter begins to brown and gives off a nutty aroma. Be careful not to burn it.
Once the butter is browned, remove it from the heat and stir in the minced garlic.
In a large mixing bowl, toss the halved baby potatoes with the browned butter and garlic mixture until evenly coated. Season with salt and pepper to taste.
Spread the potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through cooking.
Remove the potatoes from the oven and immediately sprinkle with grated Parmesan cheese and chopped fresh parsley.
Toss the potatoes gently to ensure they are evenly coated with Parmesan and parsley.
Serve hot as a delicious side dish to complement your favorite main course.
