1 pound ground beef
1 small onion, diced

1 packet taco seasoning mix
1 (10 oz) can diced tomatoes with green chilies
1 (8 oz) can tomato sauce
2 cups beef broth
8 oz uncooked pasta (penne, rotini, or your favorite)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Salt and pepper to taste
Fresh cilantro, chopped (optional)
Instructions
Cook the beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
