Ingredients
2 lbs baby potatoes, halved
2 tbsp olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the halved potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
Spread the potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through.
Remove the baking sheet from the oven and sprinkle the shredded cheddar and Parmesan cheese over the potatoes.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh parsley before serving.
