Ingredients
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
1 tablespoon unsalted butter
1 small onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
1 package (16 ounces) potato gnocchi
2 cups half-and-half
2 cups fresh spinach leaves
Grated Parmesan cheese, for serving
Chopped fresh parsley, for garnish
Instructions
In a large pot or Dutch oven, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add them to the pot. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, melt the unsalted butter. Add diced onion, carrots, and celery, and cook until softened, about 5 minutes. Add minced garlic and cook for an additional 1 minute.
Pour in chicken broth and add dried thyme, dried oregano, and bay leaf. Bring the mixture to a simmer.
Add potato gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes, until they float to the surface.
Stir in half-and-half and cooked chicken. Simmer for 5-7 minutes, allowing the flavors to meld together.
Add fresh spinach leaves to the pot and stir until wilted.
Remove the bay leaf from the soup and discard.
Taste and adjust seasoning with salt and pepper if needed.
Ladle the Chicken Gnocchi Soup into bowls. Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley.
