Ingredients
1 pound boneless, skinless chicken breasts, cut into strips
8 ounces linguine
1/4 cup olive oil
4 cloves garlic, minced
1/4 teaspoon crushed red pepper flakes
1/2 cup dry white wine
1/4 cup chicken broth
1/4 cup unsalted butter, cut into pieces
1/4 cup fresh lemon juice
Salt and pepper, to taste
1/4 cup chopped fresh parsley
Grated Parmesan cheese, for serving
Instructions
Cook linguine according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and crushed red pepper flakes. Cook for about 1 minute, until fragrant.
Pour in white wine and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes, reducing slightly.
Add butter and lemon juice to the skillet, stirring until the butter is melted and the sauce is smooth.
Return the cooked chicken to the skillet and toss to coat with the sauce. Add the cooked linguine and toss everything together until well combined.
Season with salt and pepper to taste.
Remove the skillet from heat and stir in chopped fresh parsley.
Serve the Chicken Scampi hot, garnished with grated Parmesan cheese. Enjoy!
