Ingredients
– 8 bone-in, skin-on chicken thighs – 1/4 cup olive oil – 1/4 cup soy sauce – 1/4 cup honey – 2 cloves garlic, minced – 1 teaspoon dried thyme – 1 teaspoon dried rosemary – 1 teaspoon paprika – Salt and pepper, to taste
Instructions
1. In a bowl, whisk together olive oil, soy sauce, honey, garlic, thyme, rosemary, paprika, salt, and pepper. 2. Place chicken thighs in a large resealable bag or shallow dish. 3. Pour marinade over chicken and ensure it’s well coated. 4. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight. 5. Preheat grill to medium-high heat or oven to 400°F (200°C). 6. Remove chicken from marinade and discard marinade. 7. Grill for 6–8 minutes per side or bake for 25–30 minutes, until internal temperature reaches 165°F (74°C). 8. Let rest before serving.
Notes
Boneless, skinless thighs can be used—just reduce cooking time. Try adding lemon juice or chili flakes for a zesty kick.
