1/2 cup breadcrumbs

1/4 cup milk

1 egg

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

Salt and pepper to taste

4 cups mashed potatoes (prepared)

1 cup shredded cheddar cheese

1 cup frozen corn, thawed

1/2 cup barbecue sauce

Fresh parsley for garnish (optional)


Instructions

Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.

In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until well combined.

Press the meatloaf mixture evenly into the bottom of the prepared baking dish.

Spread mashed potatoes over the meatloaf layer, smoothing with a spatula.

Sprinkle shredded cheddar cheese evenly over the mashed potatoes.

Sprinkle thawed corn evenly over the cheese layer.

Drizzle barbecue sauce over the top of the casserole.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

Remove foil and bake for an additional 15 minutes, or until meatloaf is cooked through and cheese is melted and bubbly.

Let casserole cool for 5 minutes before slicing. Garnish with fresh parsley if desired before serving.
