Ingredients
1 lb mushrooms, sliced (such as button or cremini)
4 slices bacon, chopped
1 onion, finely diced
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate.
In the same skillet with bacon drippings, add diced onion and cook until softened, about 3-4 minutes.
Add minced garlic, smoked paprika, and dried thyme to the skillet. Cook for another minute until fragrant.
Add sliced mushrooms to the skillet, stirring to coat with the onion mixture. Cook mushrooms for 8-10 minutes, or until they are tender and browned.
Season with salt and pepper to taste. Stir in the cooked bacon pieces.
Remove from heat and garnish with chopped fresh parsley before serving.
