- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1/2 cup diced onion
- 2 cups shredded sharp cheddar cheese
- Salt and pepper, to taste
- 1 cup crushed cornflakes or Ritz crackers (optional, for topping)
- Fresh chives, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine frozen shredded hash brown potatoes, melted butter, cream of chicken soup, sour cream, diced onion, shredded cheddar cheese, salt, and pepper. Mix until well combined.
- Spread the mixture evenly into the prepared baking dish.
- Optional: Sprinkle crushed cornflakes or Ritz crackers over the top.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake an additional 15-20 minutes, until golden brown and bubbly.
- Let cool slightly before serving. Garnish with chopped fresh chives.
Notes
- Use freshly shredded potatoes instead of frozen hash browns if you prefer.
- Swap cream of mushroom or cream of celery soup for cream of chicken for a different flavor.
- Add cooked bacon bits or diced ham to make it heartier.
