Ingredients
1 lb potato gnocchi
2 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
4 cups fresh spinach, chopped
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 cup vegetable broth
1/2 teaspoon nutmeg
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the gnocchi: Bring a large pot of salted water to a boil. Add gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
