Ingredients
– 1 lb (450g) ground beef – 1 onion, finely chopped – 2 cloves garlic, minced – 1 can (28 oz or 800g) crushed tomatoes – 4 cups (1 liter) chicken or beef broth – 1 cup (240ml) heavy cream – 1 cup (240ml) whole milk – 1 cup (100g) elbow macaroni or any pasta – 2 tbsp tomato paste – 1 tsp dried basil – 1 tsp dried oregano – Salt and pepper, to taste – Fresh basil leaves, chopped (for garnish) – Grated Parmesan cheese (optional)
Instructions
1. In a large pot, brown ground beef over medium-high heat. Drain excess fat. 2. Add onion and garlic, cook for 3–4 minutes until softened. 3. Stir in crushed tomatoes, broth, heavy cream, milk, tomato paste, basil, oregano, salt, and pepper. 4. Bring to a boil, reduce heat, and simmer for 15–20 minutes. 5. Meanwhile, cook pasta until al dente, drain, and set aside. 6. Add cooked pasta to the soup and simmer for 5 more minutes. 7. Adjust seasoning and consistency if needed. 8. Serve hot, garnished with chopped basil and Parmesan if desired.
Notes
Use ground turkey instead of beef for a lighter version. Add spinach or kale for extra veggies.
