Ingredients
– 1 lb (450g) fresh okra, finely chopped – 1 cup cornmeal – 1/2 cup all-purpose flour – 1 onion, finely chopped – 2 cloves garlic, minced – 1 tsp salt – 1/2 tsp black pepper – 1/2 tsp paprika – 1/4 tsp cayenne pepper (optional) – 2 eggs, lightly beaten – Vegetable oil, for frying
Instructions
1. In a large bowl, combine chopped okra, cornmeal, flour, onion, garlic, salt, black pepper, paprika, and cayenne pepper if using. 2. Mix thoroughly until well combined. 3. Add the beaten eggs and stir to form a thick batter. 4. Heat vegetable oil in a frying pan over medium heat. 5. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. 6. Fry for 3–4 minutes per side until golden brown and crispy. 7. Remove patties and drain on paper towels. 8. Serve hot with your favorite dipping sauce or as a side dish.
Notes
For a lighter version, bake the patties at 375°F (190°C) for 20–25 minutes, flipping halfway through.
