- 2 cans (10 oz each) cooked shredded chicken (or 2 cups rotisserie chicken)
- 1 can (15 oz) corn, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies (like Rotel)
- 1 packet taco seasoning
- 1 packet ranch seasoning mix (optional, adds creaminess & tang)
- 2 cups chicken broth (or water for a thicker consistency)
- Optional toppings: shredded cheese, sour cream, crushed tortilla chips, avocado, jalapeños, green onions, lime wedges
Instructions
- In a large soup pot (or slow cooker), add chicken, corn, black beans, tomatoes, taco seasoning, ranch mix, and broth.
- Stir everything together. Simmer on the stovetop for 20–25 minutes, or in a slow cooker on LOW for 4–6 hours / HIGH for 2–3 hours.
- Taste and adjust consistency: add more broth for a thinner soup, or simmer longer to thicken.
- Ladle into bowls and top with your favorite taco toppings.
Notes
- Swap canned chicken for rotisserie or even ground beef/turkey.
- Frozen corn works just as well as canned.
- For extra creaminess, stir in 4 oz cream cheese before serving.
