  • 6 cups low-sodium chicken broth

  • 4 green onions, chopped (white and green parts separated)
  • 1 tsp ground ginger
  • 1/4 tsp ground turmeric
  • 1/4 tsp ground white pepper
  • 1 tbsp low-sodium soy sauce
  • 4 large eggs, lightly beaten

Instructions

  1. In a small bowl, whisk the cornstarch with 1 cup of chicken broth until smooth. Set aside.
  2. In a large pot, heat sesame oil over medium heat. Add the white parts of the green onions and sauté for 1 minute.
  3. Add the ground ginger, turmeric, and white pepper to the pot and cook for 45 seconds until fragrant.
  4. Pour in the remaining 5 cups of chicken broth and soy sauce. Bring the mixture to a boil.
  5. Slowly whisk in the cornstarch mixture and reduce the heat to a simmer. Cook for 5 minutes until slightly thickened.
  6. Pour the beaten eggs into a pastry bag or a small zip-top bag with a corner snipped off. Slowly drizzle the eggs into the soup while gently stirring in one direction to create silky ribbons.
  7. Remove from heat and serve hot, garnished with the green parts of the chopped green onions.
