- 1 sheet puff pastry, thawed
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped sun-dried tomatoes
- 1/4 teaspoon black pepper
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, unfold and gently roll out the puff pastry to remove creases.
- In a bowl, combine crumbled feta cheese, chopped parsley, sun-dried tomatoes, and black pepper.
- Cut the puff pastry into 9 equal squares.
- Place a spoonful of the feta mixture in the center of each square.
- Fold each square diagonally into a triangle and press edges with a fork to seal.
- Brush the tops with beaten egg.
- Arrange the foldovers on the prepared baking sheet.
- Bake for 15–18 minutes, or until golden and puffed.
- Cool slightly on a wire rack and serve warm.
