Instructions

  1. In a medium saucepan, combine water, butter, salt, and granulated sugar. Bring to a boil over medium heat.
  2. Remove from heat and stir in flour until the mixture forms a smooth ball and pulls away from the sides of the pan.
  3. Transfer dough to a mixing bowl. Beat in eggs one at a time using a mixer until the dough is smooth and glossy.
  4. Heat vegetable oil in a deep skillet or fryer to 375°F (190°C).
  5. Drop spoonfuls of dough into the hot oil, frying a few at a time to avoid overcrowding.
  6. Fry each beignet for 2–3 minutes per side or until golden and puffed up.
  7. Remove with a slotted spoon and drain on paper towels.
