2 lbs ground beef

1 cup bread crumbs

2 large eggs

1 cup French onion soup mix

1/2 cup milk

1 cup shredded Gruyere cheese

1 large onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish


Instructions

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Set aside to cool slightly.

In a large bowl, combine the ground beef, bread crumbs, eggs, French onion soup mix, and milk. Mix until well combined.

Add half of the caramelized onions to the meat mixture and mix well.

Shape the mixture into a loaf and place it on the prepared baking sheet.

Bake for 45-50 minutes, or until the meatloaf is cooked through.

Remove the meatloaf from the oven and top with the remaining caramelized onions and shredded Gruyere cheese. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
