These French Onion Soup Potatoes combine the rich, caramelized flavors of French onion soup with creamy, cheesy potatoes. A comforting side dish that’s perfect for holidays, family dinners, or when you’re craving something indulgent.

- 2 lbs baby potatoes or Yukon Golds, sliced ¼-inch thick
- 2 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 cup beef broth (or vegetable broth for vegetarian)
- 1 cup heavy cream
- 1 tbsp Worcestershire sauce
- Salt & black pepper, to taste
- 1 ½ cups shredded Gruyère cheese (or Swiss, or a mix with mozzarella)
- ½ cup Parmesan cheese
Instructions
- In a skillet, heat butter and olive oil over medium heat. Add onions and cook 25–30 minutes, stirring often, until caramelized.
- Stir in garlic, thyme, Worcestershire, salt, and pepper. Add broth and simmer 5 minutes until slightly reduced.
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Layer half the potatoes in the dish.
- Top with half the caramelized onions, half the cream, and half the cheeses. Repeat layers with remaining ingredients.
- Cover with foil and bake 40 minutes. Uncover and bake 20 minutes more, until bubbly and golden.
- Rest 10 minutes before serving. Garnish with extra thyme if desired.

- Swap Gruyère with Swiss or mozzarella for a milder flavor.
- Use vegetable broth for a vegetarian version.
