Description

Ingredients

  • 2 lbs baby potatoes or Yukon Golds, sliced ¼-inch thick
  • 2 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 cup beef broth (or vegetable broth for vegetarian)
  • 1 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • Salt & black pepper, to taste
  • 1 ½ cups shredded Gruyère cheese (or Swiss, or a mix with mozzarella)
  • ½ cup Parmesan cheese

Instructions

  1. In a skillet, heat butter and olive oil over medium heat. Add onions and cook 25–30 minutes, stirring often, until caramelized.
  2. Stir in garlic, thyme, Worcestershire, salt, and pepper. Add broth and simmer 5 minutes until slightly reduced.
  3. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Layer half the potatoes in the dish.
  4. Top with half the caramelized onions, half the cream, and half the cheeses. Repeat layers with remaining ingredients.
  5. Cover with foil and bake 40 minutes. Uncover and bake 20 minutes more, until bubbly and golden.
  6. Rest 10 minutes before serving. Garnish with extra thyme if desired.
