Ingredients
2 tbsp butter, divided
1 tbsp olive oil
1/2 lb mushrooms, sliced
3 cloves garlic, minced
4 slices of your favorite bread
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
Salt and pepper, to taste
1 tbsp fresh parsley, chopped (optional)
Instructions
Heat 1 tbsp of butter and the olive oil in a large skillet over medium heat.
Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and golden brown, about 5-7 minutes.
Add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Season with salt and pepper to taste. Remove the mushroom mixture from the skillet and set aside.
Assemble the sandwiches: Layer shredded mozzarella and cheddar cheese on two slices of bread, then top with the garlic mushroom mixture. Add more cheese on top of the mushrooms if desired, and cover with the remaining bread slices.
Melt the remaining butter in the skillet over medium heat. Place the assembled sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Press down gently with a spatula while cooking to ensure even toasting and melting.
