- 1/2 tsp ground cinnamon
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Alternate adding dry ingredients and sour cream to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor and texture, fold in 1 cup of chopped pecans or walnuts, or 3/4 cup of raisins or dried cranberries.
- Dust the cooled cake with powdered sugar or glaze with a vanilla icing if desired.
- This cake stores well at room temperature for 2–3 days, or in the fridge for up to 5 days.
