Ingredients
1 pound boneless, skinless chicken breasts, thinly sliced
3 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
4 pita breads
For the Tzatziki Sauce:
1 cup plain Greek yogurt
1/2 cucumber, grated and drained
1 clove garlic, minced
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste
For the Salad:
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
Instructions
In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, and pepper. Add the chicken slices and marinate for at least 30 minutes.
While the chicken is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, fresh dill, salt, and pepper in a bowl. Mix well and refrigerate until ready to use.
In a separate bowl, combine cherry tomatoes, diced cucumber, red onion, Kalamata olives, and feta cheese to make the salad. Set aside.
Heat a large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked and browned, about 6-8 minutes.
Warm the pita breads in a dry skillet or oven.
To assemble the gyros, spread a generous amount of tzatziki sauce on each pita. Top with cooked chicken and the prepared salad.
