Ingredients
2 boneless, skinless chicken breasts
1 cup fresh pineapple, diced
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
1 cucumber, diced
1 avocado, diced
Fresh cilantro, chopped (for garnish)
For the Dressing:
1/4 cup olive oil
2 tablespoons rice vinegar
1 tablespoon honey
Juice of 1 lime
Salt and pepper, to taste
Instructions
Season chicken breasts with salt and pepper. Grill or pan-sear until cooked through. Let cool, then slice into strips.
In a large bowl, combine diced pineapple, sliced red bell pepper, sliced red onion, diced cucumber, and diced avocado.
Add sliced chicken to the bowl with the vegetables.
In a small bowl, whisk together olive oil, rice vinegar, honey, lime juice, salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients and toss gently to coat.
Garnish with chopped fresh cilantro before serving.
