Ingredients
3 cups cooked white rice (preferably day-old)
2 tablespoons vegetable oil
1 small onion, diced
1 cup diced ham
1 cup pineapple chunks (fresh or canned, drained)
1 red bell pepper, diced
1 cup frozen peas and carrots, thawed
3 green onions, sliced
2 cloves garlic, minced
3 tablespoons soy sauce
2 tablespoons oyster sauce
2 teaspoons sesame oil
Salt and pepper to taste
Instructions
Heat the oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
Sauté the onion and garlic: Add the diced onion and minced garlic to the skillet. Cook for about 2-3 minutes until the onion is translucent and the garlic is fragrant.
Add the ham: Stir in the diced ham and cook for another 3-4 minutes until it begins to brown.
Mix in the veggies: Add the red bell pepper, pineapple chunks, and thawed peas and carrots to the skillet. Cook for 3-4 minutes until the vegetables are tender and the pineapple is heated through.
Stir in the rice: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir to combine all the ingredients.
Season: Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to evenly coat the rice and vegetables. Season with salt and pepper to taste.
Finish with green onions: Stir in the sliced green onions and cook for another 1-2 minutes until everything is heated through.
Serve: Remove from heat and serve hot.
