  • 1 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 cups milk
  • 1 cup shredded coconut (sweetened)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Additional shredded coconut for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. In a large bowl, whisk together flour and sugar.
  3. Add eggs, melted butter, milk, shredded coconut, vanilla extract, and salt. Mix until fully combined.
  4. Pour the batter into the prepared pie dish.
  5. Bake for 45–50 minutes, or until the top is golden brown and the center is set.
  6. Let the pie cool completely before slicing. Top with extra shredded coconut if desired.

Notes

  • For extra coconut flavor, replace part or all of the milk with canned coconut milk.
