A classic Impossible Coconut Pie that’s incredibly easy to make! This simple batter magically creates its own crust while baking, resulting in a creamy, custardy coconut-filled dessert that’s perfect for any occasion.

- 1/2 cup all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 2 cups milk
- 1 cup shredded coconut (sweetened)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Additional shredded coconut for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
- In a large bowl, whisk together flour and sugar.
- Add eggs, melted butter, milk, shredded coconut, vanilla extract, and salt. Mix until fully combined.
- Pour the batter into the prepared pie dish.
- Bake for 45–50 minutes, or until the top is golden brown and the center is set.
- Let the pie cool completely before slicing. Top with extra shredded coconut if desired.
Notes
- For extra coconut flavor, replace part or all of the milk with canned coconut milk.
- Serve chilled or at room temperature.
- Best enjoyed within 2–3 days, stored covered in the refrigerator.
