Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 peaches, sliced
2 jalapeños, thinly sliced
1/4 cup honey
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
2 cloves garlic, minced
Fresh cilantro for garnish
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and pepper.
In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 3-4 minutes per side.
Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced peaches and jalapeños. Cook for 2-3 minutes until they begin to soften.
In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, and minced garlic. Pour the mixture over the peaches and jalapeños.
Return the chicken to the skillet, nestling it among the peaches and jalapeños.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
