Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper, to taste
Fresh parsley, for garnish
For Tahini Sauce:
1/2 cup tahini
1/4 cup water
2 tablespoons lemon juice
1 clove garlic, minced
Salt, to taste
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss cauliflower florets with olive oil, ground cumin, ground coriander, salt, and pepper until evenly coated.
Spread cauliflower in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, or until cauliflower is tender and lightly browned, stirring halfway through.
While cauliflower is roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, water, lemon juice, minced garlic, and salt until smooth and creamy.
Once cauliflower is roasted, remove from oven and transfer to a serving dish.
Drizzle tahini sauce over the roasted cauliflower.
Garnish with fresh parsley.
