1 1/2 cups granulated sugar

1/2 tsp lemon extract

Zest of 1 lemon

3 tbsp fresh lemon juice

1/2 cup granulated sugar (for rolling)


Instructions

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the softened butter and 1 1/2 cups sugar until light and fluffy.

Beat in the egg, vanilla extract, lemon extract, lemon zest, and fresh lemon juice until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and roll each ball in the remaining granulated sugar to coat.

Place the dough balls on the prepared baking sheets about 2 inches apart.

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
