Ingredients
1 (15-ounce) can chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
Dressing:
3 tablespoons olive oil
1 tablespoon red wine vinegar
Juice of 1 lemon
1 clove garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, and fresh parsley.
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
