Ingredients
4 cups shredded cabbage
1 cup grilled or canned corn kernels
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped fresh cilantro
1/4 cup crumbled cotija cheese
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Lime wedges and extra cotija cheese for garnish
Instructions
In a large bowl, combine the shredded cabbage and corn kernels.
In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and pepper until well combined.
Pour the dressing over the cabbage and corn mixture. Toss until everything is evenly coated.
Fold in the chopped cilantro and crumbled cotija cheese.
