Ingredients
3 cups cooked, shredded chicken
1 package (8 oz) cream cheese, softened
1 cup sour cream
1 cup cottage cheese
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup milk
1/4 cup chopped green onions
1 sleeve Ritz crackers, crushed
1/4 cup unsalted butter, melted
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large mixing bowl, combine softened cream cheese, sour cream, cottage cheese, shredded mozzarella cheese, shredded cheddar cheese, and condensed cream of chicken soup. Mix until well combined.
Stir in the cooked, shredded chicken, milk, and chopped green onions. Season with salt and pepper to taste.
Pour the chicken mixture into the prepared baking dish and spread it out evenly.
In a separate bowl, mix the crushed Ritz crackers with melted butter until the crackers are evenly coated.
Sprinkle the buttered cracker crumbs over the top of the chicken mixture.
Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
