½ cup baking soda
10 cups water
8 oz mozzarella cheese, cut into 16 pieces
Coarse sea salt, for sprinkling
¼ cup unsalted butter, melted (for brushing)

Instructions
Activate yeast with water and sugar until foamy.
Mix in flour, butter, and salt; knead until smooth.
Let dough rise for 1 hour.
Preheat oven to 450°F; line a baking sheet with parchment paper.
Boil water and baking soda; shape dough around mozzarella pieces.
Boil dough balls for 30 seconds, then bake for 12-15 minutes.
Brush with butter and serve warm.
