Ingredients
1 lb ground beef
1 small onion, diced
1 (10 oz) can diced tomatoes with green chilies
1 (8 oz) can tomato sauce
1 cup frozen corn
1 cup uncooked long grain white rice
1 packet taco seasoning
1 ½ cups beef broth
Salt and pepper to taste
Shredded cheese, for topping
Chopped fresh cilantro, for garnish
Instructions
In a large skillet, cook ground beef and diced onion over medium heat until beef is browned and onion is translucent. Drain excess grease.
Stir in diced tomatoes with green chilies (undrained), tomato sauce, frozen corn, uncooked rice, taco seasoning, and beef broth. Season with salt and pepper to taste.
Bring mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes or until rice is tender and most of the liquid is absorbed.
Remove from heat and sprinkle shredded cheese on top. Cover and let it sit for a few minutes until cheese is melted.
