- 4 large russet potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs, lightly beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray or olive oil, for greasing
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with oil or cooking spray.
- Wrap grated potatoes and onion in a clean towel or cheesecloth and squeeze out as much liquid as possible.
- In a large bowl, mix potatoes, onion, eggs, flour, salt, and pepper until well combined.
- Scoop 1/4 cup portions of the mixture onto the prepared baking sheet and flatten slightly.
- Brush or spray tops with oil.
- Bake for 20–25 minutes, flipping halfway through, until latkes are golden brown and crispy.
