    • 1/4 cup heavy cream
    • 1 tsp vanilla extract
    • 1215 miniature peanut butter cups, chopped
  • For the Ganache:
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup heavy cream
  • For Garnish:
    • Additional peanut butter cups

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well. Then mix in sour cream, milk, and vanilla until combined.
  5. Gradually add dry ingredients, mixing until just combined. Divide batter evenly between pans.
  6. Bake for 25–30 minutes, or until a toothpick comes out clean. Cool in pans 10 minutes, then transfer to wire racks to cool completely.
  7. For the frosting: Beat peanut butter and softened butter until smooth. Add powdered sugar, cream, and vanilla; beat until fluffy.
  8. To assemble: Place one cake layer on a serving plate. Spread frosting, sprinkle with chopped peanut butter cups, and repeat with second layer.
  9. Top with final cake layer and frost the top and sides with remaining frosting.
  10. Make the ganache: Heat cream until simmering, pour over chocolate chips, let sit 2 minutes, then stir until smooth.
  11. Pour ganache over the cake, allowing it to drip down sides. Garnish with additional peanut butter cups.
  12. Chill for 30 minutes to set ganache before serving.
