- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1 cup old-fashioned oats
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk flour, baking soda, and salt. Gradually add to the peanut butter mixture and mix until just combined.
- Stir in the old-fashioned oats until evenly mixed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
- Optional: flatten each cookie slightly with a fork, creating a crisscross pattern.
- Bake for 10–12 minutes or until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra crunch, use chunky peanut butter or add chopped peanuts.
- Drizzle with melted chocolate or sprinkle with sea salt for a gourmet touch.
