Description

Ingredients

  • 2 cups pineapple slices (fresh or canned)
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine granulated sugar, water, apple cider vinegar, cayenne pepper, and a pinch of salt.
  2. Bring the mixture to a boil over medium-high heat, stirring until the sugar has fully dissolved.
  3. Reduce heat to low and simmer the syrup for 5 minutes.
  4. Add pineapple slices to the saucepan. Simmer for 15–20 minutes until the pineapple is translucent and the syrup thickens.
  5. Using tongs, remove pineapple slices and place them on a wire rack set over parchment paper. Let cool and dry for 1–2 hours.
  6. Once dry, store the slices in an airtight container or serve immediately.

Notes

  • Use gloves when handling cayenne if you’re sensitive to spice.
  • These candied pineapples can be stored in the refrigerator for up to 2 weeks.
