Pineapple Cowboy Candy is a bold and delicious treat that blends juicy pineapple with a spicy-sweet syrup. Perfect for snacking, adding to charcuterie boards, or gifting in a cute jar!

- 2 cups pineapple slices (fresh or canned)
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup apple cider vinegar
- 1/2 tsp cayenne pepper (adjust to taste)
- Pinch of salt
Instructions
- In a medium saucepan, combine granulated sugar, water, apple cider vinegar, cayenne pepper, and a pinch of salt.
- Bring the mixture to a boil over medium-high heat, stirring until the sugar has fully dissolved.
- Reduce heat to low and simmer the syrup for 5 minutes.
- Add pineapple slices to the saucepan. Simmer for 15–20 minutes until the pineapple is translucent and the syrup thickens.
- Using tongs, remove pineapple slices and place them on a wire rack set over parchment paper. Let cool and dry for 1–2 hours.
- Once dry, store the slices in an airtight container or serve immediately.
Notes
- Use gloves when handling cayenne if you’re sensitive to spice.
- These candied pineapples can be stored in the refrigerator for up to 2 weeks.
- Try adding them to burgers, tacos, or salads for a flavor punch!
