1 sheet puff pastry, thawed

1 cup pecan halves

1/2 cup brown sugar

1/4 cup corn syrup

2 tbsp unsalted butter, melted

1 tsp vanilla extract

1/4 tsp salt

1 large egg, beaten


Instructions

Preheat your oven to 375°F (190°C).

Roll out the puff pastry sheet on a lightly floured surface and cut it into 24 equal squares.

Place each square into the cups of a mini muffin tin, pressing gently to form cups.

In a medium bowl, mix together the brown sugar, corn syrup, melted butter, vanilla extract, salt, and beaten egg until well combined.

Spoon about 1 teaspoon of the pecan mixture into each puff pastry cup.

Top each with a pecan half.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the filling is set.

Allow the bites to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
