Ingredients

For the Cabbage:

Green cabbage: 1 head, cut into 8 wedges

Olive oil: 2 tablespoons

Salt and pepper: to taste

For the Onion Dijon Sauce:

Olive oil: 1 tablespoon

Onion: 1 large, finely chopped

Dijon mustard: 2 tablespoons

Apple cider vinegar: 1 tablespoon

Honey: 1 teaspoon

Salt: to taste

Freshly ground black pepper: to taste


Instructions

Preheat Oven to 425°F (220°C).

Prepare Cabbage: Brush cabbage wedges with olive oil and season with salt and pepper.

Roast Cabbage: Place wedges on a baking sheet and roast for 25-30 minutes, turning halfway through, until golden brown and tender.

Make the Sauce: While cabbage roasts, heat olive oil in a pan over medium heat. Add onions and cook until soft. Stir in Dijon mustard, vinegar, honey, salt, and pepper. Cook for another 2 minutes.
