2 cups broccoli florets
2 cups mushrooms, sliced
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon balsamic vinegar
1/2 teaspoon dried thyme
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh parsley for garnish (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
Add the sliced mushrooms to the skillet and sauté for 5-7 minutes, or until they start to release their juices and turn golden brown.
Add the broccoli florets to the skillet and cook for another 5 minutes, stirring occasionally, until the broccoli is tender-crisp.
Stir in the soy sauce, balsamic vinegar, dried thyme, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to meld together.
If using, sprinkle the grated Parmesan cheese over the top and stir until melted and well combined.
