Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 large eggs
2 tbsp melted butter
1 tsp vanilla extract
Oil for frying
Filling:
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup diced strawberries
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
On a floured surface, roll out the dough to about 1/2-inch thickness. Use a round cutter to cut out donut shapes.
Heat the oil in a deep fryer or large pot to 350°F (175°C). Fry the donuts until golden brown, about 2-3 minutes per side. Drain on paper towels and let cool.
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the diced strawberries.
Once the donuts are cool, use a piping bag fitted with a nozzle to fill each donut with the cheesecake mixture.
