Ingredients
3 cups rhubarb, diced
3 cups strawberries, hulled and halved
1 cup granulated sugar
1 tbsp cornstarch
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
1 large egg, beaten
1/2 cup heavy cream
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine rhubarb, strawberries, 1 cup sugar, cornstarch, and vanilla extract. Mix well and transfer to a greased 9×13-inch baking dish.
In another bowl, whisk together flour, 1/3 cup granulated sugar, brown sugar, baking powder, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Stir in the beaten egg and heavy cream just until combined.
Drop spoonfuls of the batter over the fruit mixture.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
