Perfect for game day or a fun dinner, these Taco Cupcakes combine the flavors of tacos in a convenient, bite-sized form. Layers of wonton wrappers, seasoned beef, beans, and cheese are baked to perfection and topped with your favorite taco toppings. Enjoy them as a handheld snack or with a fork!


Ingredients

1 lb lean ground beef

1 packet (1 oz) taco seasoning

2/3 cup water

1 can (15 oz) black beans, drained and rinsed

2 cups shredded cheddar cheese

36 wonton wrappers

Favorite taco toppings: salsa, sour cream, guacamole, cilantro, etc.


Instructions

Preheat oven to 375°F.

Brown and crumble ground beef in a skillet over medium-high heat. Drain grease. Stir in taco seasoning, water, and black beans. Simmer for 10 minutes.

Spray 18 muffin cups with cooking spray. Place one wonton wrapper in each cup. Divide half of the meat mixture among cups. Sprinkle half of the cheese over meat. Repeat layers with another wonton wrapper, meat, and cheese.

Bake for 15-18 minutes until cheese is bubbly and wrappers are golden brown. Let stand for 5 minutes.

Serve with your favorite taco toppings.
