This classic British Sticky Toffee Pudding is rich, moist, and soaked in a luscious toffee sauce. Made with tender dates and a buttery sponge, it’s the ultimate comfort dessert—especially when served warm with whipped cream or ice cream.

For the cake:
- 1 cup dates, pitted and chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
For the toffee sauce:
- 1 cup heavy cream
- 1 cup dark brown sugar
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
Instructions
- Soften the dates: Place chopped dates in a bowl, pour over boiling water, and stir in baking soda. Let sit 10 minutes.
- Preheat the oven: Set to 350°F (175°C). Grease a 9×13-inch baking dish or individual ramekins.
- Make the batter: In a medium bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Beat in eggs and vanilla. Gradually mix in the flour mixture, alternating with the date mixture, until smooth.
- Bake: Pour batter into prepared dish or ramekins. Bake 30–35 minutes (20–25 minutes for ramekins), or until a toothpick comes out clean.
- Make the toffee sauce: In a saucepan over medium heat, combine cream, brown sugar, and butter. Bring to a boil, then reduce heat and simmer 5–7 minutes, stirring until thickened. Stir in vanilla.
- Soak the pudding: When the pudding is done, poke holes in the top. Pour half of the warm toffee sauce over it and let soak in.
- Serve: Slice and serve warm with extra toffee sauce and whipped cream or vanilla ice cream, if desired.
