Description

Ingredients
1 cup milk powder
1/4 cup all-purpose flour
1/4 teaspoon baking soda
2 tablespoons ghee (clarified butter)
3–4 tablespoons milk (as needed to make a soft dough)
Oil or ghee for frying
For the sugar syrup:
1 cup sugar
1 cup water
4–5 green cardamom pods, crushed
A few saffron strands (optional)
Instructions
In a bowl, combine milk powder, all-purpose flour, and baking soda. Mix well.
Add ghee and mix until it resembles breadcrumbs.
Gradually add milk, a tablespoon at a time, and knead into a soft dough. Cover and let it rest for 10-15 minutes.
Meanwhile, prepare the sugar syrup by heating sugar, water, crushed cardamom pods, and saffron strands (if using) in a saucepan. Bring to a boil, then simmer for 5-7 minutes until slightly thickened. Keep warm.
Divide the dough into small portions and roll them into smooth balls without any cracks.
Heat oil or ghee in a deep pan over medium-low heat. Fry the dough balls on low heat until golden brown and evenly cooked.
Remove fried Gulab Jamuns using a slotted spoon and drain excess oil.
Immediately place the hot Gulab Jamuns into the warm sugar syrup. Let them soak for at least 1-2 hours, allowing them to absorb the syrup.
Serve Gulab Jamuns warm or chilled. They taste best when served after a few hours of soaking.
