Description
Broccoli Cheddar Soup is a creamy, cheesy, and comforting classic perfect for any day of the year. Packed with tender broccoli, savory onions and celery, and rich cheddar cheese, this soup delivers a warm, satisfying experience in every bite.
Ingredients
Scale
- 4 cups fresh broccoli florets
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups chicken or vegetable broth
- 2 cups milk
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
- Pinch of nutmeg (optional)
Instructions
- In a large pot, melt butter over medium heat. Add diced onion and celery; sauté until softened, about 5 minutes.
- Stir in flour and cook for 1–2 minutes, stirring constantly to create a roux.
- Gradually whisk in broth and milk, stirring until smooth and slightly thickened.
- Add broccoli florets, bring to a boil, then reduce heat and simmer for 15–20 minutes or until broccoli is tender.
- Blend soup using an immersion blender or regular blender until desired smoothness is reached (leave some broccoli pieces whole for texture if preferred).
- Stir in shredded cheddar cheese until melted and fully combined. Season with salt, pepper, and a pinch of nutmeg if using.
- Serve hot, garnished with extra cheese or a piece of crusty bread if desired.
Notes
- Frozen broccoli can be used—add directly to the soup without thawing.
- Use half-and-half or heavy cream for a richer texture.
- Blend only half the soup for a chunkier consistency.
- Top with croutons or crispy bacon for extra crunch and flavor.
